| | Mountain Meadow Lamb Three Ways So I actually did a special other than scallops. We had some osso bucco cut lamb shanks in the freezer the so I defrosted those the other day and braised them. I was going to just do a duo but I decided to be industrious. It always bit me in the butt because we were busy and this dish was kind of a pain to put together. Oh well, it was fun and we survived. Trio of Mountain Meadow Lamb *Grilled Lamb Chop with a Sun Dried Tomato, Cucumber, and Feta Salad, Balsamic Reduction *Braised "Osso Bucco" with a Truffled Lamb Demi Glace and Yukon Gold Potato Puree *Risotto of Lamb Rillette with Porcini Mushrooms and Brunoise of Summer Vegetables

| | Thank you. The idea for this dish was to go in a more rustic style direction; Italian/Mediterranean flavors with an upscale twist. My favorite of the three was the chop. The salad and the lamb was a perfect marriage of flavors.
