I ran across this recipe today, and thought it had possiblities. I think I'd cook some chopped onions with the hash-browns.
Potato Casserole Pie
Fry 3/4 bag of hash-browns, season as desired
Add 1-8 oz container sour cream
1 can cream of mushroom soup
1.5 cups cheese shredded.
Stir to combine in fry pan, remove from heat.
MEANWHILE...
Scramble fry ground beef until cooked through,
Add 1 can cream of mushroom soup
1 cup frozen mixed veggies
Stir to combine
PREHEAT OVEN TO 350
Place hash-brown mix in the bottom of a casserole dish, top with meat/soup/veg mix, sprinkle with 1/2 cup shredded cheese.
Bake until hot through.
