Hi - New to this - looking for some advice about the Good Eats brined turkeky from Alton Brown. Can you substitute ground ginger and allspice? Can't find allspice berries and candied ginger is too expensive. Thanks!

You can use the powdered allspice and ginger in the brine. You could also leave it out.
