Pizza sauce?

what do you think are the best ingredients you can use to make pizza sauce that you can find anywhere?
 
if you can find good pizza sauce anywhere, why do you need the ingredients? :cool:

just kidding.


i'd use a couple of chopped fresh roma tomatoes, added to a pot of cooked down san marzano tomatoes (imported italian - unless you're from italy, of course) and a little tomato paste to thicken and deepen the flavor. add a little salt and black pepper, and if it's too tart, some sugar.
as far as herbs go, add equal parts oregano and savory.
 
IF you can git fresh sweet home grown tomatoes drop them in boiling water for about 30 seconds then skin them and squeese the juice into the pot you are going to be using then crush the tomatoes as much as you can then add some tomato puree and about ahalf a small can of tomato paste bring up to a simmer. Then in a dutch oven or large soup pot saute some garlic and onion till soft, add your tomato base to pot and simmer for a few about 30 minutes before you are ready to serve add sweet basil, greek oregano, a little majoram salt and pepper to taste. If you have some commercial beef stock add this now, if not a some beef base will do, becareful of the salt. Since I do not know how much sauce you want to make this is in generalitys
but most Italian tomato sauce is seasoned this way this is the herbs and spices you might use, If you feel frisky add some ground fennel to taste
