ok -this one is a cookbook (see Julia thread)

I checked this one out at the library and am trying to decide if it's worth the $12 to buy from Amazon.... Most of the recipes call for gluten to be added. I haven't tried any of the recipes yet, but other recipes from other sources have turned out great without the extra gluten. Do you think it could be ignored?

There's still a lot of info (what to do with leftovers...baker's glossaries....techniques....hints.... that I was planning on copying, but it's over 30 pages now - so I'm thinking I should just get the book.

just wondering what everyone thought?

Kathy, sometimes added gluten is necessary if you're baking with 'other' flours. Whole grain flours and non-wheat flours (rice or corn) have little or no gluten so it must be added.

It sounds like the book has a lot more than recipes so it might be useful as a reference tool. $12.00 is not a lot of money for a good cookbook.
