Vegetarian kids' cookbook?

Hello all,

My kindergartener has started cooking dinner once a week. With my help he plans the menu, lists ingredients, goes shopping, and prepares. (I do burner and knife work; he mixes and peels and arranges.) He prefers to cook vegetarian. I have a lot of vegetarian recipes (mostly Indian), but they're spicy and complicated, and I want him to try new recipes he will like to both cook and eat. Any suggestions of cookbooks for kids who cook that are either all or mostly vegetarian?

Grilled cheese sandwiches
Pizza - use a premade crust and have your kid do the toppings
veggie tacos - fill with refried black beans (canned) and toppings

Spaghetti with marinara sauce.

Greek salad.

Panzanella salad.
