I just ran across my recipe for this last night & thought I'd share it. I haven't made one of these in a long time but it's one of our favorites!! It's from the back of a Keebler Ready Crust Chocolate pie crust label.
1 Keebler Ready Crust Chocolate pie crust(or your favorite brand graham cracker or chocolate crumb crust)
1 pkg.(4oz) instant vanilla pudding & pie filling
1 envelope(1 1/3oz) whipped topping mix(like Dream Whip)
1 1/2C. cold milk
1/2tsp. vanilla
2 medium bananas
In mixing bowl, combine pudding mix, whipped topping mix, milk, & vanilla with an electric mixer on low speed until blended. Increase speed to medium & beat until very thick, about 3 minutes. Pour 1/3 of mixture into crust. Layer slices of banana on top, reserving 1/2 banana for garnish, if desired(I normally just use all the banans in the pie & skip the garnish). Pour remaining filling into crust. Chill 2 hours. Garnish with sliced banana & additional whipped topping just before serving, if desired. Note: To prevent darkening, dip banana slices in lemon juice.
