Hi there! I whipped this up for my boss who is a vegetarian the other day and she has requested it every week since then! Hope you enjoy it too!
Cajun Squash & Shrimp
6 yellow squash sliced in circles
3 zucchini sliced in half and then sliced in long triangles
olive oil
red onion (optional)
sprinkle with basil
sprinkle with Tony Chachere's Creole Seasoning
1 to 2 lbs of shrimp tails boiled with LA. Crab Boil (hint - use a tsp of olive oil in water to have shrimp peel easier). Set aside shrimp to cool after draining.
Bake vegetables in a roasting pan for at least one hour or until tender but still firm. Peel shrimp and de-vein if you feel it's necessary and throw warm shrimp over baked veges.
