I'm looking for a recipe, but I don't know what to call it. It tastes like corn bread, but it's a kind of a gritty pudding-like texture. That is, a corn bread that can be scooped and eaten with a spoon. And there's chunks of corn still in it. If anyone has any idea...

Edit: It's served at the Mexican-American restaurant Don Pablo's if anyone has been there...
 
it sounds like a spoon bread to me...with mexican additions... a really good basic source of recipes of all kinds is the new all purpose joy of cooking.

my fave corn bread is naught but cornmeal buttermilk eggs salt leavening bacon grease and a hot skillet.
