"Uncured" Bacon?

I just saw this at Sam's Club today, and tried a sample (well, two, but anyways . . . .). It was quite tasty. This was smoked with apple wood.

Isn't the curing of the pork belly the difference between bacon and pancetta? Would this arguably be pancetta then?

I ask mainly because looking for pancetta here seems to be a lost cause. Bacon all over the place, which I know can usually be substituted, but I want to try the real thing (pancetta).

I've been buying "smoked but not cured" bacon from High Hope Hogs, an organic farmer is Pittstown, New Jersey. Best Bacon I've ever eaten, and NO Nitrites.

Pancetta is Italian air-cured bacon, and should be available from any good Italian deli. I know you can get it on line at www.salumeriaitaliana.com. They won't ship it in super-hot weather, but otherwise, just go on line and order some! :)
