Been really busy so haven't been able to post much lately. Top Chef season 2 was a joke. That's all I have to say about that.

Here's something that I was working on lately. It's basically a variation of Ahi tuna with five different preparations ranging from simple to complex.

Starting from the top left hand corner and going clockwise around the plate:

1. Simply Sushi - Yellowfin Tuna Nigiri with Wasabi, Soy Sauce, and Ginger
2. Simply Sashimi - Big Eye Tuna with Wasabi, Soy Sauce, and Shiso
3. Ceviche - Yellowfin Tuna with Yuzu, Seaweed, Scallion, Jalapeno, Ginger, and Uni "Fondue"
4. "Torched" Tartare - Yellowfin Negitoro (fatty tuna belly) flash seared with a blowtorch, Shiso, Scallions, Truffle Oil, Tobiko, Cucumber-Basil Gelee
5. Ahi "Soba" - Big Eye Tuna with Transglutaminase, Japanese-style Pickled Vegetables, Ponzu Vinaigrette


 
Oh man do those all look good! I thought that fish looked very vibrant, especially the sashimi. I can't imagine what it must really look like.
