I have made this recipe many many times now and it works well for flank, flap, and flat iron cuts. What I love about this recipe is that you do not have to marinate it, it is quick and easy, and you can make the cilantro sauce anytime and freeze. The sauce can be used on salads and many other things... it was just too good to keep to myself!!!
