Almond Milk

I just made almond milk for the first time and it's yummy! I usually buy an organic almond milk sweetened with agave nectar. Thought I would try my own. It's so easy, I'll be making my own from now on!

ALMOND MILK


1 cup soaked raw almonds (soaked overnight)
4 cups filtered water
Pinch of sea salt
1 vanilla bean – seeds scooped out
2-3 soft dates (I soaked 2 medjools for 30 minutes)

In a blender, at medium, then high speed, blend soaked almonds, water, and sea salt until smooth. Pour through a strainer (or use a nut bag) to separate pulp. Pour liquid back in the the blender and blend in vanilla seeds and the dates. Pour through strainer again.

You can also use honey, maple syrup or agave nectar as a sweetener.

It's a great alternative to cows milk. :)
 
I have never heard of anything like this. I assumed it would be almond-infused milk. What a surprise! Are the almonds just soaked in h2o overnight? Does this come out white like milk?
 
Yup, soak the almonds in water overnight. And yes, it comes out milky white!

Also, I figured out if you are using a regular strainer, the last time you strain it use cheese cloth over the strainer to get it even cleaner. Mine had all the little vanilla seeds and some chalkyness from the almonds (still tasted fabulous!)
