I just open a botton of honey, and I don't know do I have to keep it in refrigerator. I think it's ok to keep it in just cool place. What do you think??
No, although unprocessed honey should be kept below 50 degrees, and ideally below 32, according to this data sheet from the National Honey Board: http://www.honey.com/downloads/shelf.pdf
I resigned my post with the National Honey Board as all my papers kept sticking to the desk.
I keep honey in my cabinet and it last a long time. But I have had it turn dark on me. I didn't know if it was still good or not! My moto is "When in doubt, throw it out"!
