This is a good use for that leftover turkey.

WALDORF TURKEY SALAD

2 cups shredded turkey, light or dark, about 1/2 x2 inch
2 large celery ribs, cut in matchstick pieces, 1/4x1 inch
1 large granny smith apple, or other tart apple, cut in small dice
1 cup large walnut pieces (or nut of choice)
1/2 cup golden raisins
1-12/ cup nonfat plain yogurt
1 Tbs finely grated orange zest
1 tsp dried herb of choice, recipe calls for tarragon which I do not like, I usually use either thyme or rosemary.
salt and pepper to taste

In a large bowl combine turkey, celery, apple, walnuts and raisins. In another small bowl combine yogurt, orange zest, herb, salt and pepper. Mix well and toss over turkey salad mixture. Taste and adjust seasonings. Cover and refrigerate at least one hour before serving. Garnish with leftover cranberry sauce and sliced oranges.

Serves 6-8, 268 callories, 13g fat, 38mg cholesterol.
