To 6 cups watercress,tear greens then,place on nice platter.In med bowl mix 2-3 Tsb. fresh lemon juice,3-tab. evoo,salt and pepper Add either 2 pears or apples thin sliced.Toss gently with dressing Place the fruit on top of the greens with a knife shave the peccorino cheese over the salad.Serve immediately.
