I am baking crostatas to bring to a cookout later today. I want to line my baking sheets with parchment, but can't get it to lay flat on the metal surface. Any ideas???
I cut it to the size of my baking sheet, spritz a little cooking spray at the ends and lay it curl side down. The weight of your crustatas and the oil will (should) keep it down. I like the crumple idea thought ...
Or you could roll it in the opposite direction it wants to curl. I recently was given a whole new roll. The first thing I did was to reroll it in this manner. The whole roll. Now when I pull off a sheet, it stays flat.
