Pasta with Garlic Greens

Pene,Cavatelli, most any pasta you love will work here. The thing I love is the mixture of greens, you can use anything your heart desires. Just make sure to rinse the greens well.you will need 1-1/2 lbs. of greens, such as kale,broccoli rabe, dandelions,mustard, mizuna. Bring a pot of water to boil add the greens and and salt to taste. Cook greens til tender about 7-10 min. this depends on the greens you pick.drain and let cool. when cool chop into bite sized pieces.Pour 1/3 cup evoo into a skillet large enough to hold the cooked pasta.Add 4 cloves thin chopped garlic, til golden, add the greens cook stirring til greens are coated with the evoo add salt and pepper. Cook 1 lb. of pasta al dente, now add 1 lb. of boiling potatoes into 1/2 inch cubesset aside some of the pasta water, drain the pasta, add pasta and potatoes to the greens and toss well. Add a little of the reserved pasta water if your pasta seems dry also a little butter or evoo salt and pepper plus some red pepper flakes would be nice.
