I keep adding more and more to my morning scrambled eggs. This morning it was mushrooms, spinach, lentils, tomato and onion. YUMMY

That's what I do when I start out with a simple fratatta. A couple of eggs, mushrooms, well maybe those leftover fried potatoes, an onion would be nice, some steamed broccoli would be great, and before you know it I am cleaning out the fridge. :angel:
 
Scrambled eggs with quinoa, chopped asparagus, red and green bells, and onion. Toasted sourdough and hazelnut coffee.
 
I had a bowl of "hundred dollar grits" for breakfast this morning. What are hundred dollar grits, you ask? It's a long-standing joke in our family.

Basically, on a trip to Arizona a couple of years ago, I bought a five pound bag of grits made from heirloom corn at an outdoor market. Some of the best I've ever tasted. When we went to the airport to catch our flight home I checked my bag and didn't think anymore about it until a few days later when an unexplained charge from the airline came through on my credit card bill. When I called the airline to ask about it, I was told it was an overweight luggage charge that was tacked on due to my bag being 5 pounds over the 50 pound weight limit. Coincidentally, it was exactly the weight of the bag of grits I had purchased.

Fortunately, after several minutes of complaining and begging, they finally agreed to credit back the charge.

So to this day, whenever I make a batch of those Arizona grits, we now refer to it as "hundred dollar grits." :LOL:
 
I am in the moment while I devour a bowl of homemade clam chowder. I made a BIG pot of it yesterday, and we all know what happens to a favorite food when we let it sit overnight. So it was not only supper for last night, but my breakfast this morning.

When I went shopping Monday, the store didn't have any potatoes from P.E.I. or Maine. So I had to settle for a bag of Yukon Gold. They turned out to be perfect for the chowder.

Yesterday while I was cutting up the salt pork, my knife slipped while I was trying to get the point under it. I got a little nick in the tip of my index finger. That bled for two whole hours. The Pirate wanted to take me to the local ER. It is what happens when you are on two blood thinners. Today the fingertip is so sore. But trying to type without using that finger is useless. I will suffer through. :angel:
 
We're having a yard sale today, so I made English muffins for us. I topped mine with butter and strawberry jam and had a couple sausage links on the side, and made a breakfast sandwich for DH with sausage and American cheese.
 
Rice crispies topped with fresh - 2 sliced strawberries, blueberries, 1/2 sliced small banana, 3 pitted cherries.
 
Two poached eggs, a mountain of steamed kale from the garden, a serving of grits, and the juice of 3 oranges. I almost got all my fruits and veggies in one meal.
 
Grits here, too! Grits with shredded sharp cheddar cheese, a teaspoon of dry ranch dressing mix and real bacon pieces in it served over a sliced-up 1/2 tomato.

Earl Grey tea, grapefruit juice and a banana rounded out the meal. Yum!
 
Oatmeal, after my walk with Greek yogurt and 1 cup coffee with cream and sugar. I've now cut the sugar down in my coffee to 1/2 tsp. Don't ask how much I put in the oatmeal.
 
Two poached eggs on a bed of steam Swiss Chard, quinoa, and a glass of unsweetened almond milk. The quinoa was white-red-black. I toasted the black before cooking it...it added an almost peanut taste to the quinoa. I'm so full.
