For dinner tonight I'm making brats in beer. I thinly sliced up an onion and am simmering it in enough beer to cover, until the onion is soft and tender along with some minced garlic, then I'll take out the onions and simmer the brats, turning them until browned all over. When the brats are ready, I'll put the onions back in to warm back up, then put a brat and some of the onions on a piece of toasted, garlicked French bread. I'll probably put a little mustard on it.
I'm also making stuffed zucchini for dinner tomorrow. I've browned some ground sausage and onion with the scooped out portion of the zucchini, to add to a stove top type cornbread stuffing, along with the diced up leftover Mushroom Gratin I made from Laurie's recipe. I'll stuff the zucchini and put it on top of the rest of the sausage stuffing and put it in the fridge to cook tomorrow. I figure the flavors will get a boost from sitting in the fridge overnight, and I'll have a good dinner with no mess to clean up.
