What I used
Hickory Smoked Country Bacon Ends & Pieces Because of the saltiness of the bacon, I blanched it prior to frying.

Cooking the Liquid Out. I did not refrigerate the jam. I drained off the fat, added the rest of the ingredients and jarred it up.
3 Jars of Bacon Jam! It is spicier and less sweet than I thought it would be. A bit like old fashioned mincemeat in texture.
