I think this recipe would qualify as baked. Take bone-in or boneless loin chops, doat with egg-wash, dredge in seasoned whole-wheat flour (shake off excess flour), dip again in egg-wash, dredge in seasoned whoe-wheat bread crumbs, and bake on a cookie sheet at 400 degrees for 40 minutes.
These babies come out with a slightly crisped outside, and are so tender and moist.
