I've been making beef and bean burritos for a while now BUT I've swiched to using ground turkey instead of the beef for health reasons.
1/2 to 3/4 pound lean ground beef or ground turkey
3/4 cup finely chopped onion
2 cloves garlic, crushed
1 Tablespoon chili powder (good with a little chipotle chili powder mixed in)
2 teaspoons ground cumin
2 teaspoons salt
1/2 cup salsa (we like Pace Medium; use whatever you love)
1 15 ounce can refried beans
6 - 8 flour tortillas, burrito size, warmed up
8 ounces shredded Monterey Jack cheese
1/2 cup salsa mixed with 1 - 8 ounce can of tomato sauce
Chopped fresh cilantro, optional
In a frying pan sprayed with PAM, brown the ground turkey or beef with the onions and garlic til crumbled and onions are softened. Drain. Stir in the spices and salt; cook for 2 minutes. Add in the entire can of refried beans and cook over medium heat til mixture is smooth; add in the salsa and stir to combine. Remove from heat.
Preheat oven to 350 degrees. In a 13x9x2 inch baking pan, spread a few tablespoons of the salsa/tomato sauce mixture. Fill each warmed up tortilla with meat and bean mixture (a few tablespoons) and fold up or roll up. Place in pan and spoon remaining sauce over all. Cover and bake for 25 minutes; sprinkle with cheese and bake, uncovered, for another 10 minutes until cheese is melted and bubbly. Sprinkle with cilantro and serve.
