I always wanted to make a thin chocolate salami that would look like the real thing. But I always ended up with either a greasy loaf or a smooth texture that clearly looked like sweet sausage. Once I was in Italy and saw how one chef used foil after food wrap. After refrigeration, it gives relief, like real smoked sausage, it's hard to tell apart. Sometimes I joke around with my friends at dinner, they even confuse it at first. It turns out the whole secret is in one foil.
Ingredients
- walnuts 60g
- sugar 80g
- cocoa 50g
- shortbread cookies 200g
- milk 50ml
- butter 120g
How I make
Step 1 | Crush the walnuts into coarse crumbs
Step 2 | Break the cookies into large and small crumbs. Add the walnuts to the cookies.
Step 3 | Mix sugar, cocoa, milk, and butter
Step 4 | Bring to a uniform consistency over low heat
Step 5 | We add the chocolate mixture to the cookies with nuts and mix well
Step 6 | We shape a salami using food wrap. We create a relief using foil, like that of a classic sausage.
Step 7 | Put it in the refrigerator for a few hours. You can also put it in the freezer.
Step 8 | We mix powdered sugar with starch in a 1:1 ratio and sprinkle it on our salami
Step 9 | We package it for presentation
