These sound great! The hard part will be getting PeppA to eat them, as she abhors coffee.
Coffee Brownies
Yields: 15 brownies
1 c (140g) Flour
½ t Baking Powder
¼ t Salt
6 T Instant Coffee, flavored types are great
1/3 c (80ml) Water
1 c (200g) Sugar
½ c (115g) Butter or Margarine, cut into pieces
1 c (225ml) Semi-Sweet Chocolate Chips
3 Eggs
Preheat oven to 350ºF (180ºC). Lightly grease 9x13” (23x30cm) baking dish. Combine flour, baking powder and salt in small bowl. Combine instant coffee and water in medium saucepan; stir until coffee is dissolved. Add granulated sugar and butter to the coffee mixture. Cook over medium heat, stirring frequently, until mixture comes to a boil. Remove from heat. Stir in morsels until smooth. Add eggs one at a time, beating well after each addition. Make a well in the dry mixture. Pour the coffee/chocolate mixture into the well and mix the dry and wet ingredients until batter is smooth. Pour batter into prepared baking pan. Bake for 18 – 20 minutes (until wooden pick inserted
in center comes out clean) at 350ºF (180ºC). Cool completely in pan on a wire rack. Cut into bars. Decadent if served with ice cream and a little chocolate syrup.
