I'm oven "poaching" some chicken breasts in chicken broth and spices, and serving it with a greek salad of romaine, crumbled feta, red onion, cucumber, tomato & kalamata olives with a homemade honey balsamic vinaigrette. (Only a little bit of crumbled feta for me, I'm trying to keep it light). DH will have LOTS of feta on his!
