I'm going to have to try zucchini raw again. Maybe my tastes have changed. I was just thinking the other day that it might work in a fish wrap when I remembered that I didn't like it raw, lol.
You have to get the smaller ones, the big ones are too tough I think. Slice thin and quarter and put into a salad or cut into strips and dip in ranch dressing or other veggie dip. I also like to slice or matchstick them and quickly saute them in olive oil with other veg and put over pasta.
