Here's an easy chicken dish. I've made it a million times and everyone always loves it.
Line a baking pan with tin foil.
Add 2 tablespoons veggie oil and heat in a 350 degree oven.
Add chicken pieces ( I like skinned and boned thigh but anything you want is fine)
Sprinkle with a combo of salt, pepper, oregano and Paprika.
Bake for 20 minutes.
Turn chicken over and spinkle with some more of the spice mixture.
Bake another 15 minutes.
Add some freshly sliced mushrooms and some Parmasian cheese ( fresh!! not the stuff in a can)
Pour some of the pan juices over the top of it all and bake until the cheese is nice and melty. You can add as much or as little of the spices as you'd like.
Serve with a simple green salad and
some fresh green beans.
