Fluffy and wet sponge biscuit

What's your advice on what to do to make the sponge cake come out fluffy, risen and wet?

Sadly, when I bake, "Fluffy" is rarely part of the description. However, there are others that should be along to give you all kinds of great advice. If you need brick substitute sponge cake, I'm your girl!
