2 1/2 cups flour
1 cup quick or regular oats, uncooked
1/2 cup chopped nuts
1 tablespoon baking powder
1 teaspoon salt
1 1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 1/2 cups firmly packed brown sugar
3 eggs
2/3 cups vegetable oil
1 teaspoon vanilla
2 cups shredded apple (about 3 large)
Heat oven to 325. Grease bottom only of 9x5 loaf pan. In medium bowl, combine flour, oats, nuts, baking powder, salt, cinnamon, and nutmeg. In large bowl, combine sugar, eggs, oil and vanilla; mix well until smooth. Stir in apple. Add flour mixture, mixing just until dry ingredients are moistened. Pour into prepared pan. Bake about one hour and 10-15 minutes, or until wooden toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan.
