Seared scallops with a lemon butter sauce, ParmR/grits souffle in the middle, with a ring of yellow and green squash.

I'm stuffed and exhausted. I remember why I don't make complicated meals that take 2 hours of nonstop cooking.

I needed a meal that cooked itself today, so opted for a shredded pork BBQ sandwich. I didn't want a ton of it, so I needed a smaller crockpot....like 2 quarts or so. (@dragnlaw is a bad influence.) After shredding and saucing the pork, we served it on "everything buns" which were toasted and we topped it with a shredded "slaw."

DH got my laptop working again yesterday evening. Today has been a day full of yak shaving. I didn't have any patience left for cooking, so we ordered burgers.
I had to look up yak shaving lol. You're very edgy ya know.
