I had purchased soy sauce powder and decided to see what I could use with it. You know how bottled soy sauce can be so salty? Well this powder is wonderful, use it sparingly as a broth for simmering the chicken.

I seared 4 pieces of chicken thighs, with the skins off. Then I added about an inch or so of water, added about a tablespoon of the soy sauce powder, and simmered the thighs til done, added corn starch to thicken the sauce.
