Does anyone have a tried and true recipe for corn casserole? If so, I would sure appreciate. Thanks.
 
My Mama used to make Baked Corn and Oysters when I was growing up and I absolutely loved it!

BAKED CORN AND OYSTERS
2 cans of creamed corn or the equivalent amount of fresh creamed corn
1 1/4 cups crackers crushed (I use Club crackers)
2 eggs, slightly beaten
1/2 tsp salt
1/2 cup milk or cream (or liquid from canned oysters)
1/4 tsp black pepper
1 tsp sugar
1/4 cup melted butter
1 1/2 cup fresh oysters (you can use the canned but fresh are much better)

Combine all the ingredients. Pour into a greased 1 1/2 quart casserole dish. Bake at 375 F for 25 minutes. Be very careful not to overcook or the oysters will get tough.

I just did this for our pitch in.. 2 different casseroles.

1 can cream corn.
1 can corn (including the liquid)
8oz sour cream
2 eggs (beaten)
1 box Jiffy muffing mix.
1/2 cup butter (melted)
A little salt.

OK, thats the standard recipe. You can stop there, mix and bake at 350 for 50-60 minutes. Here are my changes to the above.

Switch the canned corn for Corn with sweet peppers.
To that I added 2 tbls melted bacon drippings and bacon pieces. That was for the plain one.

For the spicy, I added a couple of tablespoons from a jar of diced jalapeno peppers along with the bacon fat and bacon pieces. It was just enough for a little spice without being "hot".

That sounded very much like ours, till you got to the oysters! That sounds sooo good, I can't believe I never heard of this before, LOL. Now if I can just find some fresh oysters around here!

Mine is like this, but, we used Mexican cornbread mix instead of jiffy.
so so yummy;)
 
I wonder, can you use roasted, grilled, or sauteed corn? And substitute the salt for a dash of chili powder to make it spicy?
 
BEST DARNED CORN

Ingredients:
3 cans whole kernal corn, drained
1/4 cup milk
1/2 stick butter
8 oz cream cheese
2 cups grated cheddar cheese

Directions:
Mix all together and heat in microwave or 350 degree oven till cheese is melted and bubbly.
 
We got this from a friend when my wife was still in college, around 1970. It's really good! It calls for canned corn, but I'm sure you could substitute fresh.

Scalloped Corn Casserole

3 tablespoons butter
¼ cup green bell pepper, chopped
2 tablespoons onion, chopped
¼ cup flour
1 cup milk
½ cup dry white wine or sherry
1 cup cheddar cheese, grated
1 12-ounce can white kernel corn, drained
2 eggs, slightly beaten
¼ teaspoon salt, or to taste
¼ teaspoon ground pepper, or to taste
¼ teaspoon paprika, or to taste, plus more for topping
1 cup fresh bread crumbs

1. Preheat oven to 350 degrees Fahrenheit.

2. Grease a 1½-quart casserole dish and set aside.

3. Melt butter over medium heat in medium saucepan.

4. Add onion and green pepper and saute for 5 minutes or until very tender.

5. Add flour to pan, stir to blend, and cook for about 1 minute.

6. Add milk and wine to pan; cook, stirring constantly, until mixture thickens and boils.

7. Add cheese to pan and stir over low heat until melted.

8. Remove pan from heat; add corn, eggs, salt, pepper, paprika, and bread crumbs; stir quickly to mix well before eggs set.

9. Pour into greased casserole and sprinkle a little more paprika on top to decorate.

10. Bake in 350 degree oven for 50 minutes, until firm in center.

Corn Casserole

2 cans of creamed corn
1 can of whole corn (drained)
1 box of Jiffy corn muffin mix
1 egg
2-3 green onions chopped
8 oz sour cream (optional)
2 cups of cheddar cheese

mix the corn, egg, corn bread mix and onion in a 9x13 dish. Dollup the sour cream over the top(doesn't cover it) Bake for an hour in a 350* oven. I take it out about 15 mins before its done and add the cheese,put it bake in the oven until done
