Easy and wonderful to have in this hot summer weather. This will feed 2 but I triple it for my guys.
for the dressing put 1/2 xup od vanilla yogurt 2 Tab flaked coconut 1 tab. of apricot preserves stir well cover and chill.
use a melon baller scoop out melon save the shell. cut shell into 2 wedges. Line the wedges with lettuce leaves I use the soft butter lettuce. In a med bowl combine melon balls, 1/2 cup halved strawberries spoon the mixture over the melon wedges drizzle with dressing and sprinkle with chopped walnuts and season ground nutmeg or cinnamon. Enjoy
