Kalua Pua'a
3 lb Pork Butt Roast
2 C water
1/4 C liquid smoke
1/4 Kosher salt (or Hawaiian sea salt)
Put roast fat side up in a baking pan or Dutch oven. Mix water and liquid smoke pour over roast and rub in. Cover roast with salt. Cover pan with a tight fitting lid or tightly sealed foil. Bake at 350 for 3.5 hours. Remove from oven. Shred meat with forks, pour liquid back into meat. Serve on Kings Hawaiian Sweet bread.
Roasted Pork TenderLoin in Polynesian BBQ sauce
Pork Tenderloin
1/2 C hoison sauce
1/2 C black bean sauce
1/4 C tamari
2 tsp fresh grated ginger root
1 1/2 tsp Chinese 5 spice
3 Tbls minced garlic
2 Tbls brown sugar
1 Tbls dry sherry
2 Tbls tomato paste
2 tsp dry mustard
1 tsp red food coloring
Marinade pork in remaining ingredients 24 hours... roast, serve in slices.
Chicken Long Rice
1 bundle (1 3/4 oz.) bean threads (long rice)
2 pounds chicken (breasts or thighs)
2 tablespoons macadamia nut oil
2 cloves garlic, minced
6 cups chicken stock
1 teaspoon minced ginger
1/4 cup soy sauce
1 can (10 oz.) whole mushrooms, drained or 8 dried shiitake mushrooms*
1 tablespoon thinly sliced green onions
Soak long rice in warm water for 30 minutes; drain and cut into 2 inch lengths. Remove skin and bones from chicken; reserve for stock if desired. Cut chicken into 1-inch cubes. Heat oil in a large skillet and saute chicken and garlic until light brown. Add stock, ginger, soy sauce, mushrooms and long rice. Simmer, covered, for 15 to 20 minutes or until chicken is tender. Sprinkle with green onions just before serving. Makes 8 servings.

2 pounds fresh tuna steaks, cubed
1 cup soy sauce
3/4 cup chopped green onions
2 tablespoons sesame oil
1 tablespoon toasted sesame seeds
1 tablespoon sambal olek
2 tablespoons finely chopped macadamia nuts
In a medium size non-reactive bowl, combine Ahi, soy sauce, green onions, sesame oil, sesame seeds, sambal olek, and macadamia nuts; mix well. Refrigerate at least 2 hours before serving.
*soak shiitake mushrooms in warm water for 15 to 30 minutes, then remove stem and cut into quarters
Hawaiian Potato Salad
4-5 large potatoes
1 cup shell macaroni-dry
1-2 carrots chopped
2 celery stalks-chopped
2-3 pickles to taste-chopped
1 cup peas
2 stalks green onion-chopped
salt and pepper to taste
Dressing:
1 cup mayonnaise
1/2 cup Zesty Italian dressing
2 T. pickle juice (or less)
Boil potatoes until tender. Cool and cut into cubes. Cook macaroni per package directions. Toss with remaining ingredients. Add dressing.
Salmon Cream Cheese Dip
Rice Pudding (cooked rice, crushed pineapple, homemade whipped cream)
Banana Bread
Fruit tray... pineapple, kiwi, star fruit, orange slices
Rum Drinks
Soda, Water & Kona Coffee
Champagne
Rum balls (and other Christmas cookies left over in the freezer)
