Need help making Gyro meat

Need help making Gyro meat. I've tried all kinds of recipes, some with beef, pork, lamb combinations but nothing comes out like the Gyro meat I get at the restaurant. Does anyone have a tried and true recipe, would really appreciated it, thanks all.

I don't have a TnT recipe but remember seeing A Good Eats episode on making gyros.
