Just so you know, I wasn't trying to change your mind about whether this jar of apple sauce is safe. I just want to understand for myself the details of how canning works.

ya know, I just started 'canning', this is maybe my 4th or 5th go at it... I, by NO streach of anyone's imagination, am proficient AT ALL!!!

I read this gal's blog post the other day where she posted a link to
the USDA Complete Canning Guide.
She attened a week long seminar on home canning, something about getting a certification in it, sounds like something I'd like to do.
I'm digging it, now that we live on the 'mainland' and I have access to some very inexpensive, delicious produce.
