Prosciutto with grape juice

Has anyone tried this? Does anyone here do food chemistry?

If you eat the prosciutto then drink the grape juice there is a strong metallic taste like drinking metal what is actually happening?

I don't get how that would happen but I defer to the food chemists among us!!!

I'd rather let the grape juice ferment, then have it with the prosciutto.

Wouldn't you know it? I ordered grape juice this week but it was out of stock. But I do have a little of the fermented kind.

White is the two racks on the left, red s the two racks on the right, and two bottles of Rosé at the bottom of the first rack.
