Purple Cabbage Slaw

I made this with half a head of purple cabbage. It disappeared, so I made more with the other half. Amounts are approximate.

1/2 medium head purple cabbage, shredded
1 cup shredded carrot
3 minced green onions (optional)
Large handful raisins

Put in 1 gallon ziplock, shake till combined.

Dressing:
In small bowl combine:
1/3 cup Hellman's Lite Mayo
1/3 cup Greek yogurt (or use all of one or the other)
2 T apple cider vinegar
2 T Agave syrup
Salt and pepper to taste

Mix well. Taste and adjust seasonings and dressing. Pour over cabbage mix and shake some more.
 
@ Dawgluver: What about Greek Yogurt Tzatziki ?

Would Greek Tzatziki work instead of just plain Greek Yogurt ...

Tzatziki Recipe:

Strained Greek Yogurt 450 ml
Cucumber peeled - 1
garlic cloves minced 2 or 3
fresh dill 1 1/2 tblsp
fresh mint finely chopped 1 1/2 tblsp
olive oil
red wine vinegar
salt to taste

Just a thought.

Today I am geting ready for summer. KFC slaw with potato salad. Grilled Reuben sandwiches on the side. Son #2 bought a large corn beef, cooked it and gave me half. He also bought me a beautiful piece of Swiss Cheese, I already have the sauerkraut. :yum:
