Have any puff pastry shells in the freezer, like scallops? This is also good over rice, I like the shells and a small green salad, yummers
Serves 4
5-tab. butter
1/2-c. finely chopped onion I use white or yellow
1-tea. curry powder
1/4-c. sherry
1-c. heavy cream
2-tea. chili sauce
2-tea. mango chutney
salt
1-lb. small scallops
flour to dust scallops
1-banana
chopped pistachio nuts
pimento, sliced
melt 2 tab. of butter in small skillet and saute onion til soft. Add the curry,then add the sherry and bring to a boil and reduce to about a tab. Stir in the cream, chili sauce,chutney, and salt to taste. Reduce til thickenend.
dust scallops with flour. Saute in 2 tab. of butter til opaque. Remove from pan and add to sauce. Peel and slice banana. Coat with flour and brown in the remaining butter. Fold into the scallop mix, reheating gently. Put into pastry shell or over rice garnish with pistachios and pimento slices.
