Should Tahini taste bitter?

Well, bless your heart — I'm so glad you didn't abandon your quest. I'm dying to know how your hummus turned out. Although there are a million variations practiced by lovers of hummus, I stick to a very unfancy version that's pretty basic.

1 15.5 oz. can chick peas with liquid
3 T of tahini
3 T lemon juice
1 clove of garlic, halved
salt to taste
(drizzle of olive oil and a pinch paprika when serving)

Blend as rough or smooth as you like. I hold a little liquid back to adjust texture. Bon appetit.
 
Bitter Tahini

I make my own tahini out of roasted sesame seeds and olive oil. Neither the seeds or oil are out of date or rancid. Yet when I am done, the tahini definitely has a bitter taste to it. However, when I am done adding it to my homemade hummus, the bitterness is not at all noticeable because of all the other flavors such as garlic, lemon juice and salt.
