I wanted to share how I make strawberry pie. I have taken pictures step by
step. I have used a Marie Colanders frozen pie shell but a home made one
would be better of course. The assembly of putting cut strawberries in a pie
shell, is easy and I don't have much to say about that. But the Glaze, is
what makes the pie and it is so easy. There for I have quite a few pictures
for that step. First put one pound of fresh cut strawberries in a blender
[recipe] will fallow.Add water,sugar,lemon juice,salt,and cornstarch. Blend
till smooth, at this point I add a few drops of red food coloring.[Blender
Method] Now it is time for the double boiler, heat the mixture until it
thickens stirring as the cornstarch thickens the mixture. Let the mixture
cool before pouring over the strawberries in the pie shell. I like whipped
cream on mine and I like to use a micro wave marry go round to spin the pie
while adding the whipped cream.
A note here; the recipe
[Glaze:Mash the reserved berries with a fork; add water, lemon juice and
salt.] I use the blender method !!!
The recipe
Strawberry Pie
a.. 4 boxes fresh strawberries
b.. 1/2 cup water
c.. 1 1/4 cups sugar
d.. juice of 1/2 lemon
e.. pinch of salt
f.. 5 Tbsp. cornstarch
g.. 1 12" baked pie shell
h.. few drops of red food coloring if desired
i.. Topping:
j.. 1/2 pint whipping cream (or more)
k.. 1/4 tsp. vanilla
l.. 1 1/2 Tbsp. powdered sugar

a.. Wash and stem berries, reserving 1 box for glaze. Glaze:
b.. Mash the reserved berries with a fork; add water, lemon juice and
salt.
c.. Combine sugar and cornstarch; add to the berries slowly, mixing well.
d.. Cook mixture in top of double boiler over hot water until thick and
clear. Cool
e.. Arrange remaining berries in baked pie shell, pour glaze over.
f.. Chill 2 to 3 hours.
To serve, whip cream with vanilla and powdered sugar and top pie.
