We love this with a roasted chicken or grilled chops of some sort. Place 3-1.2 lbs of Yukon golds in water and cook 45-50 minutes or til tender.Drain and cool enough to handle. Remove skins under lukewarm running water. Preheat oven to 350. Place potatoes in a large bowl and mash with potato masher. Add 1/2 tea. salt,parmigiano cheese 1/2 c. 1/2 lb of whole milk diced mozzarella 1/2 lb diced prosciutto,2-3 Tab. butter and 1 c. heavy cream.Now have some fun mix everything well with your hands til cream is absorbed. Put the mixture into an un greased 8-1/2x10 baking dish flatten top of mixture.To make the top fancy take the tines of a fork make lines on top Bake 45 min to an hour or til top is golden.Also good with veal Marsala or a pork loin.
