My little grand son Ethan is a veggie and fruit eater, but he is especially fond of tomatoes. I make this for him often and he can put away almost the whole thing and it serves 4
I take a pint of grape tomatoes, and put them in a large skillet with 2 Tab. butter, salt, 2-3 Tab. brown sugar,.and just toss around for 2-4 min. Put in a serving dish and then add 1/4 heavy cream to the skillet, stir, and pour over tomatoes, then top with Fresh chopped parsley.Easy and quick and tastes great.
