I'm still eating Cuban roast pork from Sunday. Yesterday it was a Cuban sandwich, tonight, it was a Cuban pork riff on carnitas tacos. I have no idea what to do with it tomorrow.

Meatloaf, mashed potatoes, and mixed steamed veggies. Strawberries in vanilla Greek yogurt of dessert (for the Elders). I ate my big meal for breakfast, so just has some strawberries with plain Greek yogurt for supper.

I thought I would report back on the soup:
...Anyway, I might try this recipe I saw in the April issue of Better Homes & Gardens: Spring Minestrone...
If you were thinking that YOU might like to try it too, don't bother. IMO the recipe needed too much tweaking to make it flavorful, so I pitched the magazine clipping. What is left of the soup (I should have made a half-recipe...) will be salvaged with a very, very liberal application of grated Parm. And maybe a side of Bourbon. :LOL:
