This turned out really well tonight, so thought I'd post it here. I was going to make soup but plans changed to this...
Wild Rice and Kale Chicken Casserole
1 large bag of kale, cooked and drained
3 cups cooked wild rice
In a large wok…
Saute:
6 slices diced bacon
1 med. onion, halved and sliced
1 basket of crimini mushrooms, sliced
S&P, HdP
Then add:
3 Tbs butter
3 Tbs. flour
Cook for a few min and then simmer with:
¼ cup Sherry
1 cup chick. broth
1 cup heavy cream
½ cup Gruyere cheese
Cook till thickened and then
Fold in:
2 cups diced cooked chicken (I used rotisserie chicken)
3 cups cooked wild rice
Drained cooked kale
Pour all into a 9x13 casserole and top with:
1/2 cup Gruyere cheese
½ cup sliced almonds
Bake at 375 for 35 min.
