I needed something new and different tonight, so I decided on a sausage taco/burrito thing.
Heat oven to 375.
Ingredients:
Burrito-sized tortillas
1 pound breakfast sausage
1 or 2 cut-up tomatoes, depending on taste
2 cups block sharp cheddar cheese, shredded
Bacon
Taco sauce of your choice
Fresh cilantro
Crumble up and fry the sausage, drain, and put aside. Lightly fry 2 pieces of bacon per taco/burrito until it is still soft enough for wrapping the taco.
Load the taco/burrito with the ingredients above according to taste. Hubby likes more meat, I like more tomatoes and cheese. Wrap this up with the tortillas and then wrap the tortillas with bacon, holding it together with toothpicks.
Place these on a cookie sheet with parchment paper, and put in the oven for about 15 minutes; less or more depending on how crisp you want your bacon.
Put on plates. Cut open the taco/burrito lengthwise and drizzle taco sauce into the cut area but don't drown it. Sprinkle the cut with fresh cilantro. Just a pinch or two of cilantro will do for each taco/burrito depending on taste.
And in my dim and humble opinion, this worked okay with a garden salad and apples for dessert because hubby loved it.
