1 kg small zucchini, washed and trimmed
3-4 tbsp olive oil
1 large red onion, thinly sliced
1/2 tsp sugar
75g raisins, soaked in warm water
3 tbsp pinenuts, lightly toasted
salt and pepper to taste
Cut the zucchini in quarters, place them in colander over the sink, lightly salt over them and leave them for about 20 minutes
Heat the oil and and cook the onions with the sugar very slowly for 20-30 minutes until golden, stir often
Remove from the heat and drain the onions and keep the oil
Give the zucchini a little wash to remove the salt, and dry them
Return the oil to the pan, when the oil is hot, add the zucchini and cook for about 5-6 minutes, stirring often
Drain the raisin and add to the zucchini, add also the pinenuts and sweet onions
