    Pancakes!

When cooking pancakes at home, how do I get that sweetness to them like pancakes you eat in a restaurant? I've heard adding malt powder is supposed to add that faint sweetness, but I've tried it and it doesn't seem to do anything! I can never get my pancakes to taste sweet like they do in a...

    Cookie problems???

Well I don't know if all would agree with me, but I tend to "slam" my cookies halfway through baking time. If directions say to bake 10min, I pull cookies out at 5 min and slam the sheet on the counter, then return to oven for remaining 5 min. This releases some of the air in the cookies that...

    Meringue lemon

Does anyone know how to avoid merengue shrinkage during the baking process? I haven't made a lemon merengue pie yet, but I heard that the merengue tends to shrink like a half inch to an inch from pie crust after baking. Is this true and how do I prevent it from happening?

    Waffles!

Yeah I did try folding in 1/3 of egg whites first then the rest according to directions. Is it possible I over beat them? I believe they were soft peaks. If they were more than soft would that cause the toughness?

    Waffles!

I made homemade waffles for the first time today, the flavor was great but they were tough! I was careful not to over mix and carefully folded in egg whites. Any ideas on why they came out so tough? I was so bummed! : \

Wild caught Ono ....uh yeah, I'm lost!

Well it was quite tasty, I did the broiler like you suggested for 8 minutes but i think it was a tad over done it was kinda dry. I've learned it's a very lean fish, so i will continuously baste next time and maybe cook a min less. It had a nice mild flavor, very good.
