    International carnival day at work

    Just want to clear up that it is just a theme meal for our school....my boss wants us to pick foods that you would see at a carnival like corn dogs, souvlaki, funnel cakes, etc. So we need to come up with salad, soup, dessert, hot veg.,2 starch, and 2 meats..

    So, our boss came to us today and said we would be having an international carnival day and she wants us to come up with a menu for the lunch meal. We serve 350 teenagers and about 50 adults everyday at lunch time so it needs to be something 2 cooks can handle....anyone have any ideas?

    Sloppy Reubens?

    we had Reubens last night and I am not a huge fan of the 1000 island dressing, it takes away from the corned beef (IMO) but I have bended it out with real mayo and like the milder flavor much better(just a thought).

    I am studying for my exam and was wondering if anyone can give me tips on converting a formula(recipe) to a new yield: I know I have to change the total percentage to decimal form. say I want a 6lb batter do I divide the total percentage of the recipe(formula) by the yield I want to figure...
